Seasoned Chef Now Leads Lakeshore East Steakhouse

III Forks Prime Steakhouse is proud to announce the appointment of Executive Chef Hans Aeschbacher. The kitchen team at the Lakeshore East-located restaurant and rooftop lounge will be led by a veteran chef with a twenty year, storied career.

Hans Aeschbacher’s father, also a restaurant professional, led him to where he is today. At the age of 11, Hans was mentored by his father, then Executive Chef of Lawry’s the Prime Rib in Chicago. He was introduced to knife skills, creating sauces and managing industrial kitchens. He then apprenticed in Switzerland at the Hotel Barren, finding inspiration from London chef, Anton Mosimann. Hans’ ACF apprenticeship was with Chef and James Beard winner, John Coletta. His career continued by gaining experience from other outstanding Chefs, such as David Burke, Scott Ubert and Jason Handelman. Aeschbacher opened the Sheraton Hotel, worked at the Double Tree’s Park Avenue Cafe and Mrs. Park’s tavern, reopened Trader Vic’s and opened Chicago Cut. There, his steakhouse cuisine was received with high praise. He assisted in the opening of The Local and worked to save The Chicago Tower Club, the oldest private club in Chicago.

III Forks Prime Steakhouse will raise a fork to National Filet Mignon Day (August 13) with a three day steak celebration. A special 12 ounce, premium bone-in filet mignon ($50) will be available from Friday, August 11 to Sunday, August 13 at the Lakeshore East-located restaurant and rooftop lounge. This tender cut of lean meat boasts full flavor derived from bone, providing the best of both worlds.

III Forks offers traditional filet mignon in 6, 8 and 12 ounce portions ($36, $42, $46). Steaks may be topped with a bevy of butters and crowns, including Oscar style (jumbo lump crab, asparagus, hollandaise), Blue cheese (roasted garlic, bordelaise), King’s butter (black truffles, garlic, honey, foie gras) and Parmesan crust. Chicago Craft Beer Week Events at Jerry’s

Half Acre Brews Benefit ACLU, Garden Party with Avery and Forbidden Root

During Chicago Craft Beer Week, Jerry’s in Lincoln Square and Andersonville will partner with Half Acre Beer Company, Avery and Forbidden Root for two brew-centric events.

No need to pack away your Derby hats just yet! Jerry’s in Andersonville will hold a garden party on Tuesday, May 23. Starting at 6 p.m., guests may enjoy craft brews from Forbidden Root and Avery Brewing Company on the backyard patio. A bevy of botanical beers will be featured, including Forbidden Root’s Sublime Ginger ($8/12 oz), Tropical Toy Boat ($7.50/12oz), Fernetic ($8.50/8 oz), a TBD East Coast-style Pale Ale ($8/12 oz) and Avery’s Tangerine Quad, Raspberry Sour, Apricot Sour, Vanilla Bean Stout and Coconut Porter (all $10/8oz). Laura Von Brock from Avery Brewing Company and Kevin Fitchuk from Forbidden Root will be on hand to discuss their beer. The full dining menu will be available until 11 p.m.

“Grab a Cold Cat for a Cool Cause” in Lincoln Square
Jerry’s in Lincoln Square is partnering with Half Acre Beer Company to raise funds for the Illinois chapter of the American Civil Liberties Union. On Wednesday, May 24 starting at 6 p.m., event guests are invited to enjoy “Tiger and Alice” ($8, 12oz) or “Barrel-Aged Big Hugs” ($11/8oz) brews while supporting freedom, liberty, equality and justice for all within the United States. Jerry’s will also be pouring “Galactic Double Daisy Cutter” ($8.50/12oz) and the always quaffable Pony Pils ($6, pint). Eric Kapraun from Half Acre will be on hand to discuss the craft brew scene in Chicago. The evening will feature a raffle for Half Acre and Jerry’s swag (koozies, patches, pins, stickers, beer, a growler with a free fill, hat, shirt and Jerry’s gift certificates). 10% of all sales for the evening and 100% of raffle proceeds will be donated to the ACLU of Illinois. The full dining menu will be available until 11 p.m.
